Description

These Blueberry Lemon Bars are a delightful balance of sweet and tangy, featuring fresh blueberries and a zesty lemon filling. Simple to prepare and utterly delicious, this recipe is perfect for outdoor picnics or as a refreshing dessert.


Ingredients

  • 2 cups all purpose flour
  • 1 cup unsalted butter, room temperature
  • 1/2 teaspoon salt
  • 1/2 cup powdered sugar
  • 4 eggs
  • 2 cups granulated sugar
  • 1/4 cup all purpose flour
  • 1/4 cup lemon juice
  • 2 teaspoons lemon zest, optional
  • 1 cup fresh blueberries

Instructions

  1. Combine the flour, salt, and powdered sugar in a medium bowl. Cut in the butter with a fork or pastry blender until the mixture is crumbly.
  2. Grease a 9×13 inch baking pan. Press the crust mixture firmly into the prepared pan.
  3. Bake at 350°F for 18-20 minutes or until light golden brown. Set aside to cool.
  4. In another bowl, whisk the eggs. Add sugar and flour, then whisk together. Stir in lemon juice and optional zest, mixing thoroughly. Pour over the crust and sprinkle blueberries on top.
  5. Bake for an additional 20-25 minutes until the top is subtly golden. Remove and let cool slightly.
  6. Refrigerate for at least 2 hours to cool completely. Sprinkle with powdered sugar and cut into bars.

Notes

For a more intense lemon flavor, increase zest to 1 tablespoon.
These bars can be stored in the refrigerator for up to a week. Enjoy chilled for best taste.
