- 2 cups all purpose flour
- 1 cup unsalted butter, room temperature
- 1/2 teaspoon salt
- 1/2 cup powdered sugar
- 4 eggs
- 2 cups granulated sugar
- 1/4 cup all purpose flour
- 1/4 cup lemon juice
- 2 teaspoons lemon zest, optional
- 1 cup fresh blueberries
Instructions
- Combine the flour, salt, and powdered sugar in a medium bowl. Cut in the butter with a fork or pastry blender until the mixture is crumbly.
- Grease a 9×13 inch baking pan. Press the crust mixture firmly into the prepared pan.
- Bake at 350°F for 18-20 minutes or until light golden brown. Set aside to cool.
- In another bowl, whisk the eggs. Add sugar and flour, then whisk together. Stir in lemon juice and optional zest, mixing thoroughly. Pour over the crust and sprinkle blueberries on top.
- Bake for an additional 20-25 minutes until the top is subtly golden. Remove and let cool slightly.
- Refrigerate for at least 2 hours to cool completely. Sprinkle with powdered sugar and cut into bars.
Notes
For a more intense lemon flavor, increase zest to 1 tablespoon.
These bars can be stored in the refrigerator for up to a week. Enjoy chilled for best taste.
