These Blueberry Pie Bars are a delightful dessert, featuring a buttery oat crust topped with fresh blueberries, making them a perfect sweet treat for any gathering.

- 1 ¼ cup all purpose flour
- 1 cup rolled oats
- ½ cup brown sugar
- ½ tsp baking powder
- ½ tsp salt
- 10 tbsp butter, melted
- 1 tsp vanilla
- 3 cups blueberries
- 2 tbsp lemon juice
- ⅓ cup sugar
- 3 tbsp cornstarch
- ½ tsp vanilla
Instructions
- Preheat the oven to 350°F and line an 8×8 baking dish with parchment paper, allowing a 1" overhang for easy removal; set aside.
- In a large bowl, mix the flour, oats, brown sugar, baking powder, and salt together, then add the melted butter and vanilla, stirring to combine.
- Press ⅔ of the crust mixture into the bottom of the prepared baking pan and set aside.
- In another large bowl, combine the blueberries, lemon juice, sugar, cornstarch, and vanilla, then pour the mixture over the crust. Sprinkle the remaining ⅓ of the crust mixture over the blueberries.
- Bake in the oven for 55 minutes, or until the blueberries are bubbling and the crust is golden. Allow the bars to cool completely in the pan before lifting them out using the parchment paper. Slice into 9 bars and enjoy!
Notes
For best taste, use fresh blueberries when in season.
These bars can be stored in an airtight container for up to 4 days.
Feel free to substitute the blueberries with another berry of your choice.
