Instructions
- Preheat your oven to 350°F (177°C).
- Lightly grease a mini muffin tin with cooking spray or oil; silicone works best for easy removal.
- Melt together the semisweet chocolate and butter in a microwave-safe bowl or over low heat on the stovetop. Stir until smooth and glossy, then set aside to cool slightly.
- In a standing mixer bowl, beat the eggs for 1 minute until pale and thick.
- Add the granulated sugar to the eggs and beat for an additional minute until dissolved.
- Incorporate the melted chocolate and butter mixture along with the vanilla extract; stir on low speed until fully combined.
- Add the all-purpose flour, cocoa powder, and sea salt; mix just until combined.
- Spoon the batter into each well of the muffin tin, filling them to the top with about 1.5 tablespoons of batter each.
- Bake in the preheated oven for 12 to 15 minutes, until the tops are shiny and set, and the brownie bites rise slightly.
- Transfer the muffin tin to a wire cooling rack and allow the brownie bites to cool completely in the tin before removing them.
