Description

This Caprese Pasta Salad combines the vibrant flavors of fresh mozzarella, juicy tomatoes, and aromatic basil. It’s easy to prepare, making it a delightful choice for a quick, healthy meal or a tasty side dish at gatherings.


Ingredients

  • 1 pound cavatappi pasta
  • 16 ounces mozzarella pearls or ciliegine (cherry-sized)
  • 2 pints grape tomatoes or cherry tomatoes, dry, sliced in half
  • ½ cups fresh basil julienned (or approximately one bunch)
  • 2/3 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 tablespoons balsamic vinegar
  • 3 teaspoons minced garlic
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper

Instructions

  1. Bring a large pot of salted water to a boil and cook the cavatappi pasta until al dente according to package instructions. Drain and rinse under cold water until cooled.
  2. In a large bowl, combine the halved tomatoes.
  3. Add the mozzarella pearls and fresh basil to the bowl with tomatoes.
  4. In a small jar or measuring cup, mix together the olive oil, lemon juice, balsamic vinegar, minced garlic, salt, and black pepper until well combined.
  5. Add the cooked and cooled pasta to the bowl with tomatoes and mozzarella.
  6. Pour half of the dressing over the pasta mixture and toss gently to combine. Adjust the amount of dressing to your preference.
  7. Save the remaining dressing to revive the pasta before serving, as it may absorb the dressing over time.
  8. Serve and enjoy!

Notes

For extra flavor, consider adding diced avocado or grilled chicken.
The salad can be made ahead of time but add dressing just before serving to keep it fresh.
Store in an airtight container in the refrigerator for up to three days.
