Instructions
- Preheat your oven to 350 degrees Fahrenheit and spray a 9 x 13 pan with non-stick spray.
- In a small bowl, mix together flour, brown sugar, and softened butter to create a crumbly mixture for the shortbread crust.
- Press the crust mixture evenly into the bottom of the pan and bake for 20 minutes.
- In a medium bowl, beat the softened cream cheese, sugar, and vanilla until smooth. Add the eggs and mix well; set aside.
- Prepare the apples by peeling, coring, and dicing them to measure 3 cups. Combine the apples with brown sugar, cinnamon, and nutmeg in a mixing bowl; set aside.

- Once baked, allow the crust to cool for 10 minutes.
- Spread the cream cheese mixture evenly over the cooled crust, then layer the prepared apples on top. Finally, sprinkle the streusel evenly over the apples.
- Bake for an additional 30-40 minutes until the cheesecake layer is set.
- Allow to cool, then refrigerate until firm. Serve chilled with caramel sauce drizzled over each piece.
Notes
Feel free to add nuts to the streusel layer for added crunch.
These bars can be stored in the refrigerator for up to a week.
For a caramel drizzle, warm the caramel sauce before serving.
