Carmelitas are an irresistible treat with layers of chocolate chip cookie dough, melted caramel, and semi-sweet chocolate chips. Easy to prepare and perfect for sharing, these are a delightful addition to any dessert table.

- 30 ounces chocolate chip cookie dough
- 11 ounces caramels
- ¼ cup evaporated milk
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F.
- Slice just over half of the cookie dough into 1/4" rounds and lay them in a single layer on a parchment-lined 9-inch square baking pan.
- Press the dough into a solid, even layer.
- Bake for 20 to 25 minutes until golden brown, then remove from the oven and let cool slightly.
- In a microwave-safe container, combine the unwrapped caramels and evaporated milk. Heat on high for 1 minute, stir, and continue heating in 30-second intervals until the caramel is completely melted.
- Sprinkle chocolate chips over the slightly cooled cookie crust.
- Drizzle the melted caramel over the chocolate chips.
- Crumble the remaining cookie dough over the top of the caramel; it doesn't need to be perfect.
- Return the caramelitas to the oven and bake for an additional 12-15 minutes until they begin to turn golden brown.
- Let cool to room temperature, then refrigerate for at least 2 hours before serving.
- Allow them to sit out for 15 minutes before cutting and serving.
Notes
For a gluten-free option, use gluten-free cookie dough.
Ensure to cover the caramelitas well while refrigerating for better texture.
These treats can be stored in an airtight container for up to a week.
