Description

This Cheesy Chicken Casserole features a blend of tender chicken, creamy sauce, and the rich flavors of cheddar and bell peppers, making it a perfect choice for a comforting weeknight dinner.


Ingredients

  • 3 cups medium shells uncooked
  • 3 tablespoons butter
  • 1 onion finely diced
  • ⅓ cup diced red bell pepper
  • 1 teaspoon chili powder
  • ½ teaspoon seasoned salt
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1⅓ cups milk
  • 3 cups shredded sharp cheddar cheese divided
  • ⅓ cup shredded parmesan cheese
  • 3 cups cooked chopped chicken
  • 4 ounces canned mild green chiles

Instructions

  1. Preheat the oven to 375°F.
  2. Cook the medium shells al dente based on the package instructions.
  3. In a skillet over medium heat, melt the butter and add the diced onion and red bell pepper. Cook until both are tender, about 5 minutes. Stir in the chili powder and seasoned salt.
  4. In a large bowl, mix together the cream of chicken soup, the cooked onion mixture, milk, 2 cups of shredded sharp cheddar cheese, and the shredded parmesan cheese until well combined. Then, fold in the cooked chicken, green chiles, and pasta.
  5. Spread the mixture into a 9×13 inch casserole dish, then top with the remaining shredded cheddar cheese.
  6. Bake in the oven for 30 to 35 minutes, or until the casserole is hot and bubbly.

Notes

Feel free to substitute any cooked chicken you have on hand.
Add more vegetables like broccoli or spinach for extra nutrition.
For a spicier version, consider using hot green chiles instead of mild.
