- ⅓ cup soy sauce
- ⅓ cup canned pineapple juice
- 2 tablespoons lime juice
- ¼ cup packed light brown sugar
- 1 tablespoon extra virgin olive oil
- 2 teaspoons sesame oil
- 2 teaspoons chipotle chili pepper powder
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 1 pound boneless skinless chicken breast
- 1 pineapple
- 3 bell peppers (red, orange, yellow)
- 1 large red onion
- fresh chopped cilantro (optional)
- lime wedges (optional)
Instructions
- In a medium bowl, whisk together the soy sauce, pineapple juice, lime juice, brown sugar, olive oil, sesame oil, chipotle chili powder, garlic powder, salt, and pepper.
- Add the chicken to the marinade, cover, and refrigerate for at least 30 minutes or overnight.
- Preheat your grill or oven to 400°F.
- Thread the marinated chicken, pineapple, peppers, and onions onto skewers.
- Cook the kebabs by grilling for 15–20 minutes, turning every 5 minutes, or baking for 15–20 minutes until the chicken is cooked through and reaches 165°F.
- Serve with chopped cilantro and extra lime wedges.
Notes
For extra flavor, marinate the chicken overnight.
Feel free to substitute your favorite vegetables on the skewers.
Make sure to soak wooden skewers in water for 30 minutes before grilling to prevent burning.
