Description

Savor the irresistible flavor of Chicken Salad with Grapes, Pecans, and Croissant Croutons. This recipe combines fresh ingredients, simple prep, and crunchy croutons, making it an excellent choice for a quick, healthy meal or a delightful lunch!

Ingredients

Scale
  • 3 cups chopped croissants, 1-inch pieces
  • 6 cups chopped romaine lettuce
  • 2 cups cooked shredded rotisserie chicken
  • 1 cup chopped celery
  • 1 cup chopped red grapes
  • 1 cup chopped toasted pecans
  • 1/3 cup chopped red onion
  • 1/4 cup chopped parsley
  • 1/4 cup olive oil
  • 1/4 cup plain greek yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon mayonnaise
  • 1 tablespoon red wine vinegar
  • 2 teaspoons honey
  • 1 teaspoon dijon mustard
  • 1 clove garlic, minced
  • kosher salt and black pepper, to taste

Instructions

  1. Preheat the oven to 375°F and arrange the chopped croissant pieces on a large baking sheet in a single layer. Bake for 8 to 10 minutes, stirring once midway through, until they turn golden brown and crisp. Cool them after removing from the oven.
  2. In a medium bowl, combine the olive oil, Greek yogurt, lemon juice, mayonnaise, red wine vinegar, honey, Dijon mustard, and minced garlic. Season with kosher salt and black pepper, whisk until smooth and creamy.
  3. In a large bowl, mix together the romaine lettuce, shredded chicken, celery, grapes, toasted pecans, red onion, and parsley. Drizzle the dressing over the salad and gently toss to coat everything well.
  4. Just before serving, sprinkle the croissant croutons on top for an extra crunch. Enjoy immediately.

Notes

For added flavor, use fresh herbs like dill or basil in the salad.
This salad can be served on its own or as a sandwich filling for a delightful twist.
Leftovers can be stored in the fridge, but the croutons are best fresh.
