Description

Chili Lime Roasted Cauliflower offers an irresistible combination of spicy chipotle and zesty lime, all wrapped around tender cauliflower florets. This easy dish is perfect for a quick weeknight dinner or a healthy side for gatherings, ensuring a satisfying and delicious experience for all food lovers.


Ingredients

  • 1 large head cauliflower, cut into florets
  • 2 garlic cloves, minced
  • 2.5 tbsp extra virgin olive oil
  • 1.5 tsp chipotle powder (more or less for spiciness!)
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp lime juice (1 medium to large lime)
  • 1 tbsp coriander/cilantro leaves, finely chopped (optional, sub parsley or chives)

Instructions

  • Preheat the oven to 200°C/390°F.
  • In a large bowl, combine the cauliflower florets with the olive oil and minced garlic, mixing well to coat the cauliflower.
  • Add the chipotle powder, salt, and black pepper, tossing everything together to ensure an even coating.
  • Spread the cauliflower mixture on a baking tray and bake for 25 minutes, tossing halfway through until the edges are caramelized and the cauliflower is just tender.
  • Take the tray out of the oven, push the cauliflower together, and drizzle lime juice over the top.
  • Garnish with chopped coriander and serve hot.

Notes

Adjust the amount of chipotle powder based on your heat preference.
Leftovers can be stored in an airtight container in the fridge and reheated for later enjoyment.
