Description

These Chocolate Chip Zucchini Bars offer a delightful combination of flavor and texture. Packed with zucchini and chocolate chips, they are an easy treat that can be enjoyed as a quick dessert or snack. Perfectly moist and easy to prepare, these bars are sure to impress!


Ingredients

  • 2 cups zucchini, shredded
  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 tbsp vanilla
  • 1 tsp cinnamon
  • 1 3/4 cups flour
  • 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 1 (11 oz) bag chocolate chips

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and spray a 9 x 13 pan with non-stick spray, then set aside.
  2. Grate enough zucchini to measure 2 cups (approximately 2 zucchini).
  3. In a large mixing bowl, cream together the softened butter, brown sugar, eggs, and vanilla until the mixture is smooth.
  4. Mix in cinnamon, flour, salt, and baking powder until everything is well combined.
  5. Gently fold in the shredded zucchini and chocolate chips until evenly distributed.
  6. Pour the mixture into the prepared pan and spread it evenly.
  7. Bake for 30 to 35 minutes, or until a toothpick inserted comes out clean.
  8. After removing from the oven, press additional chocolate chips into the top of the bars.

Notes

For best flavor, use fresh zucchini when possible.
These bars can be stored in an airtight container for up to a week.
Feel free to add nuts for extra crunch if desired.
