Description

Ingredients

  • 2 cups (250 g) all-purpose flour
  • ¾ teaspoon baking powder
  • ¾ teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 cup (200 g) light brown sugar
  • ½ cup (100 g) granulated sugar
  • ¾ cup (164 g) vegetable oil
  • 1 teaspoon vanilla extract
  • 2 large eggs, room temperature
  • 2 ½ cups grated zucchini
  • 1 ½ cups (255 g) milk chocolate chips, divided

Instructions

  1. Preheat the oven to 350°F and prepare a 9×5-inch loaf pan with nonstick spray or butter and flour.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, combine brown sugar, granulated sugar, vegetable oil, vanilla extract, and eggs, whisking until smooth.
  4. Combine the dry ingredients with the wet mixture and stir until just mixed. The batter will be thick.
  5. Fold in the grated zucchini evenly into the batter, allowing it to loosen a bit.
  6. Incorporate 1 ¼ cups of the chocolate chips before transferring the batter into the prepared loaf pan. Top with remaining chocolate chips, pressing them in gently.
  7. Bake for 65 to 75 minutes until a toothpick inserted in the center comes out with moist crumbs. If browning too fast, cover loosely with foil for the last 10 to 15 minutes.
  8. Once done, let the bread cool in the pan for 15 to 20 minutes before transferring it to a wire rack. Cool slightly before slicing.

Notes

For best results, do not wring the grated zucchini dry; just gently press to remove excess moisture.
Store leftover bread in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
You can substitute chocolate chips with nuts or add spices like cinnamon for a different flavor.
