Description

Ingredients

  • 10 ounces fettuccine pasta (or your favorite pasta)
  • 1 teaspoon salt
  • 2 tablespoons butter
  • 3 cloves garlic, chopped
  • 1 cup full-fat cottage cheese
  • 1/2 cup parmesan cheese, freshly grated
  • 1/2 cup milk
  • salt and pepper (to taste)

Instructions

  1. Bring a large pot of salted water to a boil over medium-high heat. Cook the fettuccine according to the package directions, about 2-3 minutes for fresh pasta or 8-10 minutes for dried. Reserve ½ cup of pasta water, then drain.
  2. In a large skillet, melt butter over medium heat until bubbly. Add garlic and sauté until fragrant, about 30-60 seconds, careful not to burn.
  3. Transfer the garlic butter to a blender. Add cottage cheese, Parmesan cheese, and milk. Blend until smooth and creamy, about 1-2 minutes.
  4. Pour the sauce back into the skillet. Heat over medium-low, stirring constantly, until warmed through and slightly thickened, about 3-5 minutes. Adjust the consistency with reserved pasta water as needed and season with salt and pepper to taste.
  5. Add the cooked fettuccine and toss to coat evenly in the creamy sauce. Serve warm with extra Parmesan if desired.

Reserve pasta water to adjust sauce consistency as needed.
Feel free to use any pasta type you prefer for this recipe.
