Description

This Cottage Cheese Tiramisu Crepe Roll combines irresistible flavors with an easy prep. Filled with creamy cottage cheese and espresso, it’s a delightful treat for any occasion.


Ingredients

  • ½ cup all-purpose flour
  • ½ teaspoon kosher salt
  • 1 cup 4% cottage cheese
  • ½ cup water
  • 3 large eggs
  • 2 tablespoons unsalted butter
  • 1 tablespoon maple syrup
  • ½ cup heavy cream
  • ¾ cup 4% cottage cheese
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon espresso powder
  • 2 tablespoons cocoa powder

Instructions

  1. Preheat the oven to 350℉. Line a standard size baking sheet (12"x18") with parchment paper and spray with nonstick cooking spray.
  2. Add the crepe ingredients to a high-speed blender and blend until smooth.
  3. Transfer the crepe mixture to the prepared baking sheet.
  4. Bake at 350℉ for 10 minutes. Remove from the oven and allow to cool for a few minutes before refrigerating for an hour.
  5. Prepare the filling by blending cottage cheese, syrup, vanilla extract, and espresso powder in a high-speed blender until smooth. Set aside.
  6. In a large bowl, whip the heavy cream until stiff peaks form.
  7. Fold the blended cottage cheese mixture into the whipped cream.
  8. Place the cooled crepe on a cutting board. Spread the filling onto the crepe, leaving a 3-inch border at one end.
  9. Roll the crepe from the filled end towards the empty border.
  10. Sift cocoa powder on top, slice, and serve.

Notes

For a richer flavor, use full-fat cottage cheese.
Ensure the crepes are completely cooled before filling to avoid a soggy texture.
