- 4 chicken cutlets or 2 chicken breasts cut horizontally
- 1½ teaspoons smoked paprika
- ¾ teaspoon garlic powder
- ¾ teaspoon onion powder
- ¾ teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil divided
- 1 small yellow onion diced
- 1 (15 ounce) can black beans drained and rinsed
- 1 (15.25 ounce) can corn kernels or southwest corn, drained
- 1 (10.5 ounce) can diced tomatoes with chilies or petite diced tomatoes, drained
- 2 tablespoons fresh lime juice juice from 1 lime
- ¼ cup barbecue sauce any variety
- ¾ cup shredded mexican cheese blend
- chopped fresh cilantro, jalapeños, and avocado for serving
Instructions
- Preheat the oven to broil (500°F) and arrange the rack 6 inches below the broiler.
- In a small bowl, combine smoked paprika, garlic powder, onion powder, salt, and black pepper. Reserve 1½ teaspoons for the cowboy caviar.
- Season both sides of the chicken with the seasoning mix.
- In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium-high heat. Cook the chicken breasts for 3-4 minutes on each side until fully cooked (165℉) and transfer to a plate.
- Reduce heat to medium, add the remaining tablespoon of oil to the skillet, then add the diced onion and cook until tender, about 4-5 minutes.
- Add black beans, corn, diced tomatoes, reserved seasoning mix, and lime juice to the skillet. Stir to combine and cook for 4-5 minutes until heated through.
- Return chicken to the skillet, brush with barbecue sauce, and top with shredded cheese.
- Broil for 2-3 minutes, or until the cheese is melted and bubbly.
- Serve topped with sliced jalapeños, chopped cilantro, and avocado if desired.
Notes
You can use any variety of barbecue sauce to suit your taste.
Feel free to adjust the spice levels by adding more jalapeños as desired.
This dish pairs well with rice or a fresh salad on the side.
