This Creamy Cilantro Lime Corn is a delicious side dish featuring roasted corn slathered in cilantro lime crema, topped with cotija cheese. Perfect for quick meals!

- 6 ears corn, husk and silk removed
- 4 tablespoons softened butter
- salt and pepper, to taste
- 1 cup cilantro lime crema
- cilantro, for garnish
- Tajin, for garnish
- crumbled cotija cheese, or queso fresco, for garnish
Instructions
- Preheat the oven to 400°F.
- Place the corn on a large baking sheet. Coat each ear with softened butter and season with salt and pepper.
- Roast the corn at 400°F for 20 minutes. Optionally, turn the broiler on high for the last 2 minutes for extra char. Rotate the corn to avoid burning.
- Remove from the oven and generously spread cilantro lime crema over the corn. Garnish with toppings of your choice and enjoy!
Notes
For extra flavor, add lime juice to the toppings.
This dish pairs well with grilled meats.
