Description

Creamy Tuscan Tortellini Soup is a delightful dish that combines rich flavors with simple preparation. Made with fresh ingredients like garlic, tortellini, and kale, it’s an ideal choice for a quick and comforting meal at home.

Ingredients

Scale
  • 1 tablespoon extra virgin olive oil
  • 4 garlic cloves, minced
  • 4 tablespoons organic all-purpose flour
  • 1 ½ tablespoons tuscan marry me blend
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • 3–4 tablespoons organic tomato paste
  • 5–6 sundried tomatoes, optional
  • 4 cups chicken or vegetable stock, organic
  • 1 ½ cups organic heavy cream
  • ½ lemon, freshly-squeezed
  • 1 cup chopped kale, organic
  • 2 cups cherry or grape tomatoes
  • 2 (8 oz.) packages organic cheese + spinach tortellini
  • 2 bay leaves, optional
  • 1 cup freshly-grated parmesan

Instructions

  1. In a medium-sized dutch oven pot over medium high-heat, add the olive oil. Once heated, add the minced garlic, sundried tomatoes (if using), and fresh tomatoes, sautéing for 1-2 minutes until fragrant.
  2. Add the Tuscan marry me blend, smoked paprika, and sea salt, stirring until combined. Then add the tomato paste and flour, continuing to stir until well mixed.
  3. Slowly incorporate the chicken or vegetable stock while stirring frequently to avoid lumps, until the mixture thickens.
  4. Add the lemon juice, heavy cream, tortellini, bay leaves (if using), and kale, stirring to combine everything. Let it simmer for 8-10 minutes until the soup thickens and the tortellini are tender.
  5. Stir in the freshly-grated parmesan until it melts smoothly. Remove from heat.
  6. Serve in bowls, topped with additional parmesan if desired, alongside garlic bread or a salad.

Notes

For extra flavor, try using herb roasted tomatoes.
Adjust the level of tomato paste based on your taste preference.
For a vegetarian version, skip adding chicken stock and replace with vegetable stock.
