Description

Ingredients

  • 2 ½ cups diced apples
  • 2 teaspoons granulated sugar
  • ½ teaspoon cinnamon
  • ½ cup all-purpose flour
  • ½ cup packed brown sugar
  • ¼ teaspoon salt
  • 3 tablespoons unsalted butter, melted
  • 2 large eggs
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 cup sour cream
  • 2 cups all-purpose flour

Instructions

  1. Preheat the oven to 350°F and line muffin pans with paper baking cups.
  2. In a medium bowl, microwave the diced apples with a little water for about 2 minutes until slightly translucent, then drain and sprinkle with cinnamon and sugar.
  3. Combine the topping ingredients in another bowl and set aside.
  4. Mix eggs, sugar, and oil in a large bowl until creamy. Add vanilla, vinegar, baking soda, cinnamon, and salt. Stir in sour cream and then mix in flour until just combined. Fold in the apples.
  5. Fill muffin cups about ⅔ full with batter, then sprinkle crumble topping evenly over each muffin.
  6. Bake for 15-19 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  7. Store in an airtight container for up to 3 days, or freeze for up to one month.

Notes

For added texture, consider adding nuts or chocolate chips to the batter.
To ensure even baking, avoid overfilling the muffin cups.
