- 1 medium red onion chopped small
- 4 cloves garlic minced
- 2 jalapeño peppers seeded and chopped
- 2 (15-ounce) cans black beans drained and rinsed
- 1/2 teaspoon ground cumin
- 1 teaspoon salt or to taste
- 3 tablespoons fresh lime juice
- 1/4 cup chopped cilantro plus more for serving

Instructions
- Warm olive oil in a small pan over medium heat.
- Sauté the chopped red onion, garlic, and jalapeño peppers for about 5-8 minutes, stirring frequently; remove from heat.
- Add drained and rinsed black beans to a food processor.
- Combine cooked onion, garlic, peppers, cumin, salt, lime juice, and cilantro; process until fairly smooth, leaving some chunky texture if desired.
- Transfer the mixture to a serving dish and top with additional cilantro, vegan cheese, and pickled red onions, if using. Serve with tortilla chips and enjoy.
