- 2 1/2 cups flour
- 1/2 tbsp sugar
- 1/2 tsp salt
- 1 cup butter, cold & diced
- 7 tbsp cold water
- 1 egg + 1 tbsp water for egg wash
- sugar for sprinkling, optional
- 2 tbsp water
- 2 tsp lemon juice
- 1 tsp vanilla
- 6 cups blackberries
- 3/4 cup sugar
- 5 tbsp cornstarch
Instructions
- In a food processor, combine flour, sugar, and salt; pulse until mixed.
- Add cold, diced butter and pulse until coarse crumbs form.
- Incorporate cold water and pulse until the mixture forms moist clumps.
- Transfer the dough onto parchment paper, divide into two, and flatten into discs without kneading.
- Wrap the discs in plastic wrap and refrigerate for 1 hour.
- Preheat oven to 400°F (200°C) when ready to use the crust.
- In a saucepan, combine water, lemon juice, vanilla, and blackberries over medium heat.
- Stir in sugar and cornstarch, cooking until thickened; set aside.
- Flour the counter and roll out the bottom pie crust to a 12-inch circle.
- Transfer the crust to a 9-inch pie plate, being careful not to tear it.
- Add the blackberry filling, spreading it evenly without touching the edges.
- Roll out the top crust and place it over the pie, trimming edges with a knife.
- Pinch or fork the edges to seal.
- Whisk together 1 egg and 1 tbsp water; brush over the top crust.
- Optionally, sprinkle sugar on top.
- Cut a few slits in the top to allow steam to escape.
- Bake for 15 minutes, then reduce heat to 350°F (175°C) and continue baking for 45-50 minutes until bubbly and golden brown.
- Check at 30 minutes; cover if crust darkens too much.
- Cool at room temperature before slicing and serving.
Notes
For a sweeter pie, adjust the sugar in the filling to your taste.
Letting the pie cool helps the filling set up better for clean slices.
Use a variety of berries for a mixed berry pie twist.
