Description

This Easy Blackberry Pie is a delightful treat, featuring sweet blackberries nestled in a buttery crust. Perfect for gatherings or cozy nights in, this pie is simple to prepare and absolutely delicious, making it a favorite for homemade dessert lovers.


Ingredients

  • 2 1/2 cups flour
  • 1/2 tbsp sugar
  • 1/2 tsp salt
  • 1 cup butter, cold & diced
  • 7 tbsp cold water
  • 1 egg + 1 tbsp water for egg wash
  • sugar for sprinkling, optional
  • 2 tbsp water
  • 2 tsp lemon juice
  • 1 tsp vanilla
  • 6 cups blackberries
  • 3/4 cup sugar
  • 5 tbsp cornstarch

Instructions

  1. In a food processor, combine flour, sugar, and salt; pulse until mixed.
  2. Add cold, diced butter and pulse until coarse crumbs form.
  3. Incorporate cold water and pulse until the mixture forms moist clumps.
  4. Transfer the dough onto parchment paper, divide into two, and flatten into discs without kneading.
  5. Wrap the discs in plastic wrap and refrigerate for 1 hour.
  6. Preheat oven to 400°F (200°C) when ready to use the crust.
  7. In a saucepan, combine water, lemon juice, vanilla, and blackberries over medium heat.
  8. Stir in sugar and cornstarch, cooking until thickened; set aside.
  9. Flour the counter and roll out the bottom pie crust to a 12-inch circle.
  10. Transfer the crust to a 9-inch pie plate, being careful not to tear it.
  11. Add the blackberry filling, spreading it evenly without touching the edges.
  12. Roll out the top crust and place it over the pie, trimming edges with a knife.
  13. Pinch or fork the edges to seal.
  14. Whisk together 1 egg and 1 tbsp water; brush over the top crust.
  15. Optionally, sprinkle sugar on top.
  16. Cut a few slits in the top to allow steam to escape.
  17. Bake for 15 minutes, then reduce heat to 350°F (175°C) and continue baking for 45-50 minutes until bubbly and golden brown.
  18. Check at 30 minutes; cover if crust darkens too much.
  19. Cool at room temperature before slicing and serving.

Notes

For a sweeter pie, adjust the sugar in the filling to your taste.
Letting the pie cool helps the filling set up better for clean slices.
Use a variety of berries for a mixed berry pie twist.
