Description

This Easy Boursin Bruschetta Dip combines rich Boursin cheese with fresh tomatoes and basil for an unforgettable appetizer! Its simple prep and delightful flavor make it perfect for gatherings or a cozy night in.


Ingredients

  • 2 packages (5.3 oz each) Boursin
  • 11/2 cups chopped de-seeded tomatoes
  • 1/4 cup packed fresh basil leaves, chopped
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic, pressed
  • Salt and pepper to taste
  • Balsamic reduction, Alessi brand recommended
  • Crackers or crostini, for serving

Instructions

  1. Allow the Boursin cheese to sit at room temperature for 15-20 minutes to soften.
  2. In a small mixing bowl, combine chopped tomatoes, basil, olive oil, balsamic vinegar, garlic, salt, and pepper. Mix to combine and let sit for 5 minutes.
  3. Spread the softened Boursin cheese in an even layer in an 8-9 inch shallow serving dish.
  4. Layer the bruschetta mixture on top of the Boursin, discarding excess juices.
  5. Drizzle with balsamic reduction and garnish with extra basil leaves. Serve immediately with crackers or crostini.

Notes

For added flavor, let the bruschetta mixture marinate longer before serving.
Adjust the seasoning to your preference, and feel free to add more garlic for a stronger taste.
