Description

  • 5 graham cracker sheets
  • 1 box of brownie mix for an 8×8 inch pan
  • 2 egg yolks
  • 1/2 cup vegetable oil or melted butter
  • 1/3 cup brewed hot coffee
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup chocolate chips
  • 2 cups mini marshmallows

Instructions

  1. Preheat the oven to 325°F and line the bottom of an 8×8 inch baking pan with parchment paper or aluminum foil, allowing for overhang on the sides.
  2. Arrange the graham cracker sheets in a single layer on the bottom of the pan, breaking them as needed to cover entirely.
  3. In a large mixing bowl, combine the brownie mix, egg yolks, brewed hot coffee, vegetable oil, vanilla extract, and salt. Gently fold in the chocolate chips.
  4. Pour the brownie mixture over the graham cracker layer in the prepared pan and bake for 40 minutes.
  5. Remove the brownies from the oven and top with mini marshmallows. Return to the oven and bake for an additional 3-4 minutes until marshmallows are slightly toasted.
  6. Once baked, use a kitchen torch to toast the marshmallows further if desired. Let the brownies cool completely before slicing.

Notes

For easier slicing, allow the brownies to cool in the fridge for a short time after they have cooled to room temperature.
Feel free to substitute melted butter for the vegetable oil for a richer flavor.
Experiment with different types of chocolate chips, such as dark or white chocolate for varied taste.
