Ingredients

  • 4 boneless skinless chicken breasts
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ cup all-purpose flour
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter
  • 1 large yellow onion, thinly sliced
  • 2 teaspoons garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • ½ cup heavy cream
  • ½ teaspoon Worcestershire sauce
  • Fresh parsley, chopped, for garnish

Instructions

  1. Pound the chicken breasts to about ½ to ¾ inch thickness for even cooking or slice large breasts in half horizontally.
  2. Season both sides of the chicken with salt, pepper, paprika, garlic powder, and onion powder.
  3. Place flour in a shallow bowl and lightly dredge the chicken, shaking off excess flour.
  4. In a large skillet over medium heat, add olive oil. Once hot, add the chicken and cook for 4 to 5 minutes on each side until golden brown. The chicken does not need to be fully cooked at this stage. Transfer the chicken to a plate and set aside.

Notes

For added flavor, consider marinating the chicken in the seasoning mix for an hour before cooking.
If you prefer a thicker gravy, add a bit more flour during the preparation of the gravy.
Garnish with fresh parsley right before serving for a pop of color.
