Description

This Easy Cowboy Caviar is bursting with flavors from black beans, vibrant bell peppers, and a zesty dressing, making it a perfect, healthy side for any gathering!


Ingredients

  • 2 (15-ounce) cans black beans, drained and rinsed
  • 1 (15-ounce) can black-eyed peas, drained and rinsed
  • 1 large red bell pepper, seeded and diced
  • 1 large yellow bell pepper, seeded and diced
  • 2 fresh jalapeños, seeded and diced
  • 1 ½ cups frozen corn kernels, thawed and drained
  • ½ cup finely diced red onion
  • ½ cup finely chopped fresh cilantro
  • 1 cup fresh seeded and diced tomato, optional
  • 2 fresh avocados, diced and added just before serving, optional
  • ¼ cup red wine vinegar
  • 2 heaping tablespoons honey
  • 1 fresh lime, juiced
  • 1 tablespoon fine sea salt
  • 2 chipotles in adobo plus 2 teaspoons sauce from the can
  • 1 cup avocado or vegetable oil
  • 1 teaspoon dried oregano
  • 1 teaspoon black pepper

Instructions

  1. In a large bowl, combine the black beans, black-eyed peas, bell peppers, corn, red onion, cilantro, and optional tomato.
  2. In a blender, combine red wine vinegar, honey, lime juice, salt, and chipotles with sauce. Blend until mixed, then slowly add oil while blending until thickened. Stir in oregano and black pepper, adjusting taste as desired.
  3. Pour half the dressing over the bean and vegetable mixture and stir well. Cover and refrigerate for at least 3 hours before serving.
  4. Before serving, stir the cowboy caviar and add more dressing if needed. If using, fold in the fresh avocado just before serving. Any leftover dressing can be stored for a few days and works well as a marinade.
  5. Serve with tortilla chips or as a topping for tacos.

Notes

Allowing the flavors to meld in the refrigerator enhances the taste, so plan for some chilling time.
This dish is versatile; add or substitute vegetables according to your preference.
For more spice, leave some seeds from the jalapeños or add more chipotles.
