- ½ pound (8 ounces) penne pasta
- 3 tablespoons butter
- 1/2 tablespoon flour
- 2 cloves garlic, minced
- 2 cups corn, fresh or frozen
- 2/3 cup heavy cream
- 1 tablespoon lemon juice, freshly squeezed
- 1/2 cup parmesan cheese, freshly grated
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 1/4 cup fresh basil
Instructions
- Boil salted water in a large pot. Cook the penne pasta until al dente, about 8-10 minutes. Reserve ½ cup pasta water, drain, and set aside.
- Melt butter in a large skillet over medium heat. Whisk in flour and cook for 1 minute.
- Add minced garlic and corn to the skillet. Cook for about 2 minutes until fragrant and corn softens.
- Stir in heavy cream, lemon juice, and ¼ cup reserved pasta water. Cook for about 1 minute until smooth and thickened. Mix in Parmesan cheese until melted, adding more pasta water for a looser sauce if necessary.
- Season with salt and pepper. Add the drained pasta and fresh basil to the skillet, tossing to combine.
- Garnish with extra Parmesan and fresh basil if desired. Serve warm.
Notes
Feel free to use frozen corn if fresh is unavailable.
