- 1 tablespoon worcestershire
- 1 tablespoon dijon mustard
- 1 tablespoon dehydrated minced onions
- 1 1/2 teaspoons garlic powder
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 4 brioche buns, toasted in butter
- 8 oz double cream brie, cut into slices
- 2 cups arugula
- 1/2 cup mayonnaise
- 1 teaspoon prepared horseradish
- 1 tablespoon dijon mustard
- 1 teaspoon honey
Instructions
- Melt butter and olive oil in a large dutch oven over medium heat. Add the onions and cook covered for 10 minutes until starting to wilt. Remove lid, lower heat, and add thyme, salt, and pepper; cook until deeply caramelized. Stir in dijon and balsamic, then set aside.
- Chop half of the cooled caramelized onions and combine them in a bowl with ground beef, Worcestershire, dijon, dehydrated onion, garlic powder, salt, and pepper. Mix gently and shape into patties, roughly 1 inch thick, larger than the buns.
- Mix mayo, dijon, horseradish, and honey in a small bowl; season with salt and pepper to make the burger sauce.
- Preheat grill to 450°F, ensuring grates are clean and lightly oiled.
- Grill burgers for 3-4 minutes per side, then let rest. Top with brie slices while warm.
- Spread burger sauce on toasted buns, add burger patties, caramelized onions, and arugula before serving.
Notes
Adding a bit more thyme can enhance the flavor profile of the burgers.
Make sure the burgers are slightly larger than the buns as they will shrink while cooking.
