This French Onion Meatloaf is a delightful combination of ground beef, rich caramelized onions, and gooey cheese. It’s easy to prepare and makes for a comforting dinner option, topped with a luscious onion sauce that everyone will love.

- 3 tablespoons butter, divided
- 2 large onions, thinly sliced
- 2 pounds ground beef
- 2 eggs
- 1/2 cup breadcrumbs
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon flour
- 1 cup beef broth
- 1/2 cup Swiss cheese, shredded
- 4–5 slices provolone cheese
Instructions
- Preheat your oven to 350°F (175°C).
- Melt 2 tablespoons of butter in a skillet over medium heat. Add sliced onions, cooking for 20-25 minutes until golden and caramelized. Save half for the sauce.
- In a large bowl, mix together ground beef, eggs, breadcrumbs, Worcestershire sauce, thyme, salt, pepper, and remaining onions until just combined.
- Shape the mixture into a loaf and place it in a baking dish or loaf pan. Bake for 45 minutes.
- While the meatloaf is baking, use the skillet with reserved onions, add remaining butter, and let it melt. Stir in flour, cooking for 1 minute while whisking. Gradually add beef broth and simmer for 5-7 minutes until it thickens slightly.
- Take the meatloaf out of the oven, top with Swiss cheese and provolone slices, then broil for 3-5 minutes until the cheese is melted and golden.
- Allow the meatloaf to rest for 5-10 minutes before slicing and serve with onion sauce on top.
Notes
You can substitute ground turkey for a leaner option.
Make sure to let the meatloaf rest properly before slicing for cleaner cuts.
