Description

Ingredients

  • 1/4 cup olive oil
  • 1/3 cup fresh lemon juice
  • 2 tablespoons lemon zest (about the zest of two lemons)
  • 1 small shallot diced fine
  • 4 garlic cloves
  • 1 tablespoon dijon mustard
  • 1 tablespoon dried oregano
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 4 pounds bone-in skin on chicken thighs

Instructions

  1. In a large bowl, mix together the marinade ingredients.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes or up to 24 hours.
  3. Preheat your oven to 400 degrees Fahrenheit.
  4. Place the chicken in a baking dish and pour the marinade over it. Cover and bake for 45 to 55 minutes, or until the internal temperature reaches 165 degrees Fahrenheit.
  5. Once cooked, uncover the chicken, turn on the broiler, and broil for an additional 2 to 3 minutes to crisp the skin, watching closely to avoid burning.
