  • 4 boneless skinless chicken breasts (about 68 oz each)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 ½ teaspoons salt
  • Black pepper, to taste, optional
  • Avocado oil or other high-heat oil
  • 1 cup mayonnaise
  • 3 cloves garlic, minced
  • 1 tablespoon dijon mustard or siracha to taste for a spicy version
  • 1 tablespoon lemon juice
  • 4 brioche buns or ciabatta rolls
  • 2 avocados, sliced
  • 1 large tomato, sliced
  • Lettuce leaves or arugula
  • 8 slices crispy bacon
  • ½ red onion, thinly sliced
  • Dill pickles
  • Hot honey for drizzling

Instructions

  1. Prepare the garlic aioli by mixing all aioli ingredients in a small bowl and set aside.
  2. Dry the chicken breasts with paper towels. Preheat the grill to medium-high heat and combine the seasonings in a small bowl. Rub the chicken with oil and coat both sides evenly with the seasoning mix.
  3. Grill the chicken for 4-7 minutes on each side until the internal temperature reaches 165°F (74°C). Let it rest for a few minutes after grilling.
  4. Slice and lightly toast the brioche buns on the grill while the chicken rests.
  5. Assemble the sandwiches by spreading garlic aioli on the bottom half of each toasted bun and placing a grilled chicken breast on top.
  6. Layer avocado slices, tomato slices, lettuce leaves, and two slices of bacon on each sandwich. Add pickles if desired.
  7. Drizzle hot honey over the sandwich to taste.
  8. Top each sandwich with the upper half of the bun and serve immediately.

Notes

For a spicier kick, add more siracha to the garlic aioli.
Let the grilled chicken rest to keep it juicy before assembling the sandwiches.
