- 4 boneless skinless chicken breasts (about 6–8 oz each)
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 ½ teaspoons salt
- Black pepper, to taste, optional
- Avocado oil or other high-heat oil
- 1 cup mayonnaise
- 3 cloves garlic, minced
- 1 tablespoon dijon mustard or siracha to taste for a spicy version
- 1 tablespoon lemon juice
- 4 brioche buns or ciabatta rolls
- 2 avocados, sliced
- 1 large tomato, sliced
- Lettuce leaves or arugula
- 8 slices crispy bacon
- ½ red onion, thinly sliced
- Dill pickles
- Hot honey for drizzling
Instructions
- Prepare the garlic aioli by mixing all aioli ingredients in a small bowl and set aside.
- Dry the chicken breasts with paper towels. Preheat the grill to medium-high heat and combine the seasonings in a small bowl. Rub the chicken with oil and coat both sides evenly with the seasoning mix.
- Grill the chicken for 4-7 minutes on each side until the internal temperature reaches 165°F (74°C). Let it rest for a few minutes after grilling.
- Slice and lightly toast the brioche buns on the grill while the chicken rests.
- Assemble the sandwiches by spreading garlic aioli on the bottom half of each toasted bun and placing a grilled chicken breast on top.
- Layer avocado slices, tomato slices, lettuce leaves, and two slices of bacon on each sandwich. Add pickles if desired.
- Drizzle hot honey over the sandwich to taste.
- Top each sandwich with the upper half of the bun and serve immediately.
Notes
For a spicier kick, add more siracha to the garlic aioli.
