Description

This Grilled Corn Elote Style is packed with mouthwatering flavors and is incredibly easy to prepare. Featuring fresh corn, creamy mayo, and tangy lime, it’s perfect for summer gatherings or a quick, delicious side dish.


Ingredients

  • 4 ears corn
  • 3 tablespoons mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup cilantro, freshly chopped
  • 1/2 cup Parmesan cheese, freshly grated
  • 1/4 cup cotija cheese
  • 1 lime, juiced
  • chili powder, to taste
  • 2 limes cut into wedges, for garnish

Instructions

  1. Remove the husks from the corn, keeping the core intact.
  2. Preheat a grill or cast iron pan and grill the corn, turning until charred on all sides.
  3. In a small bowl, combine the mayonnaise, sour cream, and cilantro.
  4. Once grilled, slather the corn with the mayonnaise mixture using a basting brush.
  5. Squeeze lime juice over the corn and generously sprinkle with Parmesan and cotija cheeses, then add chili powder to taste.

Notes

For extra flavor, try adding garlic powder to the mayonnaise mixture.
Make sure to grill the corn on high heat for the best char.
Garnish with chopped cilantro for added freshness.
