Description

This Grilled Corn Salad is a tasty and colorful addition to your summer cookout. Made with fresh corn, juicy tomatoes, and crisp cucumbers, it’s a light and healthy option that can be prepared quickly, making it perfect for casual dinners or gatherings with friends and family.


Ingredients

  • 4 ears of corn, shucked and silks removed
  • ¼ cup olive oil
  • 1 cup cherry or grape tomatoes, quartered
  • 1 english cucumber, sliced and quartered
  • ½ medium red onion, diced
  • ¼ cup chopped fresh herbs
  • 2 tablespoons apple cider vinegar
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • optional: crumbled feta

Instructions

  1. Preheat an outdoor grill or indoor grill pan to medium-high heat. Lightly brush the corn with 2 tablespoons of olive oil and grill for 8 to 10 minutes, turning occasionally until evenly charred.
  2. Once the corn is cool enough to handle, use a knife to shave off the kernels into a bowl.
  3. Add the corn kernels, tomatoes, cucumber, red onion, and herbs to the bowl. Pour in the remaining 2 tablespoons of olive oil, apple cider vinegar, salt, and pepper. Gently mix to combine all ingredients.
  4. If desired, add crumbled feta on top before serving.

Notes

Use a mix of fresh herbs for more flavor variety.
Grilled Corn Salad can be served warm or chilled for a refreshing taste.
This dish pairs well with grilled meats or as a standalone light meal.
