- 4 ears of corn, shucked and silks removed
- ¼ cup olive oil
- 1 cup cherry or grape tomatoes, quartered
- 1 english cucumber, sliced and quartered
- ½ medium red onion, diced
- ¼ cup chopped fresh herbs
- 2 tablespoons apple cider vinegar
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- optional: crumbled feta
Instructions
- Preheat an outdoor grill or indoor grill pan to medium-high heat. Lightly brush the corn with 2 tablespoons of olive oil and grill for 8 to 10 minutes, turning occasionally until evenly charred.
- Once the corn is cool enough to handle, use a knife to shave off the kernels into a bowl.
- Add the corn kernels, tomatoes, cucumber, red onion, and herbs to the bowl. Pour in the remaining 2 tablespoons of olive oil, apple cider vinegar, salt, and pepper. Gently mix to combine all ingredients.
- If desired, add crumbled feta on top before serving.
Notes
Use a mix of fresh herbs for more flavor variety.
