- ½ cup pesto
- 2 tbsp yogurt
- 2 tbsp mayo
- 2 tbsp lemon juice
- 2 tbsp water
- 2 garlic cloves, minced
- ¼ tsp salt
- 1 lb. chicken breast, thin sliced or slice larger breasts in half
Instructions
- In a large bowl, mix together pesto, yogurt, mayonnaise, lemon juice, water, minced garlic, and salt.
- Add the chicken to the bowl and toss until well coated. Cover and refrigerate for at least 1 hour, or up to 24 hours for more flavor.
- Remove the chicken from the refrigerator 20-30 minutes before grilling to let it reach room temperature.
- Preheat your grill to medium heat, about 400°F. Place the marinated chicken on the grill, cooking for 3 minutes on each side.
- Transfer the grilled chicken to a cutting board, allow to rest for a few minutes, then slice and serve.
