Description

Grilled Pesto Chicken is a must-try for those seeking a quick and healthy meal. With its rich flavors from pesto and a blend of creamy ingredients, this dish is a delightful choice for any weeknight dinner.


Ingredients

  • ½ cup pesto
  • 2 tbsp yogurt
  • 2 tbsp mayo
  • 2 tbsp lemon juice
  • 2 tbsp water
  • 2 garlic cloves, minced
  • ¼ tsp salt
  • 1 lb. chicken breast, thin sliced or slice larger breasts in half

Instructions

  1. In a large bowl, mix together pesto, yogurt, mayonnaise, lemon juice, water, minced garlic, and salt.
  2. Add the chicken to the bowl and toss until well coated. Cover and refrigerate for at least 1 hour, or up to 24 hours for more flavor.
  3. Remove the chicken from the refrigerator 20-30 minutes before grilling to let it reach room temperature.
  4. Preheat your grill to medium heat, about 400°F. Place the marinated chicken on the grill, cooking for 3 minutes on each side.
  5. Transfer the grilled chicken to a cutting board, allow to rest for a few minutes, then slice and serve.

Notes

For more flavor, marinate the chicken overnight.
