Description

Enjoy the delightful flavors of our Ground Beef and Zucchini Skillet. This easy one-pan dish brings together lean ground beef, fresh zucchini, and vibrant basil pesto, making it a quick and healthy option for any dinner table.


Ingredients

  • 1 pound lean ground beef
  • 1/3 cup diced shallot
  • 2 cloves garlic, grated or minced
  • 1 teaspoon Italian seasoning
  • 2 small zucchini, diced
  • 1 cup corn, frozen or fresh
  • 1/3 cup basil pesto
  • 1 tablespoon balsamic vinegar
  • Chopped basil for garnish

Instructions

  1. Heat a 12-inch skillet over medium-high heat. Drizzle in olive oil and add the ground beef. Crumble and cook for 2-3 minutes before adding shallots and garlic, seasoning with salt, pepper, and Italian seasoning.
  2. Cook for another minute until shallots soften and garlic is fragrant.
  3. Push the ground beef mixture to one side of the skillet, then add zucchini and corn. Season with salt and pepper.
  4. Cook until the ground beef is fully cooked and zucchini is tender. Stir in the pesto and balsamic vinegar to combine.
  5. Taste and adjust seasoning as needed. Top with chopped basil and serve immediately.

Notes

Feel free to substitute other vegetables like bell peppers or mushrooms if desired.
Store leftovers in an airtight container in the fridge for up to 3 days.
