Description

These Healthy Apple Muffins with Cottage Cheese are a delightful blend of flavors, featuring tender apples and creamy cottage cheese. Perfect for breakfast or a healthy snack, they are easy to prepare and sure to satisfy your cravings.


Ingredients

  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 teaspoons cinnamon
  • ¼ teaspoon nutmeg
  • 2 cups diced granny smith apples, peeled, divided
  • ¼ cup avocado oil
  • ½ cup packed light brown sugar
  • 1 cup cottage cheese, 4%, blended smooth
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • ¼ cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. Preheat the oven to 425°F. Line 6 wells of a 12-cup muffin tin with paper liners, skipping a well in between each.
  2. In a large bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg until combined.
  3. Add 1.5 cups of diced Granny Smith apple to the dry ingredients and toss until coated in flour.
  4. In another bowl, whisk together avocado oil, brown sugar, blended cottage cheese, eggs, and vanilla until smooth.
  5. Pour the wet mixture into the dry ingredients and fold until just combined; avoid overmixing.
  6. Divide the batter among the 6 prepared muffin liners, filling them to the top.
  7. In a small bowl, mix brown sugar and cinnamon for the topping, and sprinkle over the muffins. Add the reserved apple on top.
  8. Bake at 425°F for 5 minutes. Then reduce the temperature to 350°F and continue baking for 13-18 minutes until a toothpick comes out clean.
  9. Cool on a wire rack for 5-10 minutes before removing from the tin. Repeat with the remaining batter.
  10. For a glaze, mix powdered sugar and milk until smooth and drizzle over cooled muffins.

Notes

Make sure to space out the muffin liners for the best rise.
Do not overmix the batter to keep the muffins tender.
For sweetness, adjust the brown sugar according to your preference.
