- ½ cup almond milk
- ½ cup maple syrup
- 2 tablespoons melted coconut oil or avocado oil
- 1 teaspoon vanilla
Instructions
- Preheat your oven to 350°F and line a muffin tin with paper liners or lightly grease the cups.
- In a medium bowl, combine the oat flour, rolled oats, baking powder, baking soda, cinnamon, and salt. Stir to combine.
- In a separate large bowl, whisk together the eggs, applesauce, maple syrup, almond milk, vanilla extract, and oil until smooth.
- Add the dry ingredients to the wet ingredients and stir gently until just combined. Avoid overmixing.
- Divide the batter evenly among the muffin cups and top with additional rolled oats.
- Bake for 18-20 minutes, or until a toothpick inserted into a muffin comes out clean.
- Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
