Description

These Honey BBQ Chicken Bowls combine savory chicken, sweet honey, and zesty BBQ sauce for a quick, satisfying meal. Perfect for busy weeknights or meal prep, this dish is packed with flavor and nutrition, making it ideal for anyone craving a homemade treat.


Ingredients

  • 2 pounds chicken breast
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 cup bbq sauce
  • 1/4 cup honey
  • 1 cup long grain rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, (canned or frozen)
  • 1 head romaine lettuce, chopped
  • ½ cup shredded cheddar cheese
  • ¼ cup pickled onions
  • ¼ cup chopped cilantro
  • ¼ cup ranch dressing

Instructions

  1. Cook the long grain rice according to the package instructions.
  2. In a skillet, heat the olive oil over medium heat.
  3. Season the chicken breasts with salt, pepper, paprika, and garlic powder.
  4. Cook the seasoned chicken in the skillet until browned and cooked through, about 6-7 minutes per side.
  5. In a bowl, mix the BBQ sauce with honey to create a glaze.
  6. Once the chicken is cooked, pour the honey BBQ sauce over it and let it simmer for a couple of minutes.
  7. Assemble the bowls by placing a base of rice, then top with sliced chicken, black beans, corn, chopped romaine, shredded cheese, pickled onions, cilantro, and drizzle ranch dressing on top.

Notes

For extra flavor, marinate the chicken in BBQ sauce and honey before cooking.
Feel free to add vegetables like bell peppers or avocado for more nutrition.
