Description

This Chocolate Meringue Pie is a delightful treat with rich chocolate flavor and a light, fluffy meringue topping. Perfect for any occasion, this pie brings a homemade touch that everyone will love.

Ingredients

Scale
  • 1 homemade or store-bought pie crust
  • 1 cup granulated sugar
  • ⅓ cup cornstarch
  • 2 tablespoons cocoa powder
  • ¼ tsp salt
  • 2 ¾ cups whole milk, divided
  • 4 large egg yolks, reserve the whites for meringue
  • 6 oz bittersweet chocolate, chopped
  • 2 tbsp unsalted butter
  • 1 ½ tsp vanilla extract
  • 4 large egg whites, room temperature
  • 1/4 tsp salt
  • ½ tsp cream of tartar
  • 2/3 cup granulated sugar
  • ½ tsp vanilla extract

Instructions

  1. Roll out your pie dough and fit it into a 9-inch pie dish. Trim and crimp the edges as desired. Chill in the fridge for 30 minutes or in the freezer for 15 minutes to prevent shrinking.
  2. Prick the base of the crust with a fork to prevent puffing. Line the crust with parchment paper or foil, covering the bottom and sides. Fill with pie weights, dried beans, or sugar.
  3. Bake the crust at 375°F for 20 minutes.
  4. Remove the parchment and weights carefully. Return the crust to the oven and bake uncovered for an additional 10-15 minutes, or until the bottom is dry and lightly golden brown. Allow it to cool completely before adding the filling.

Notes

Chilling the crust is essential to avoid shrinkage while baking.
Use room-temperature egg whites for a better meringue texture.
Feel free to adjust the sweetness of the filling by using more or less sugar.
