Description

This Juicy Grilled Tequila Lime Marinated Chicken features irresistibly bold flavors and simple prep, ideal for a quick dinner or a healthy meal that everyone will enjoy.


Ingredients

  • 2 lbs boneless skinless chicken thighs
  • ¼ cup tequila blanco
  • ¼ cup lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon dried cilantro (or fresh chopped)
  • 1 tablespoon packed dark brown sugar
  • 1 tablespoon garlic paste
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon tomato powder (or tomato paste)
  • ½ teaspoon chipotle powder
  • kosher salt & fresh ground black pepper, to taste
  • fresh sliced lime, chopped cilantro- for garnishes, optional

Instructions

  1. Place chicken thighs in a large resealable plastic bag or bowl.
  2. Add tequila, lime juice, olive oil, cilantro, brown sugar, garlic paste, cumin, paprika, tomato powder/paste, chipotle powder, and salt/pepper. Toss to combine and coat the chicken.
  3. Seal the bag or cover the bowl and refrigerate for at least 2 hours or overnight.
  4. Before grilling, bring chicken to room temperature for even cooking.
  5. Preheat grill to medium-high heat (375-450°F) and grease grates.
  6. Grill chicken thighs for 4-5 minutes per side or until the internal temperature reaches 165°F.
  7. Remove chicken from the grill and let it rest for at least 10 minutes before serving.
  8. For stovetop grilling, heat grill pan over medium heat, brush with 1 tablespoon oil, and grill chicken 5-7 minutes per side until cooked through.
  9. Garnish with lime wedges and cilantro, if desired.

Notes

Marinating the chicken overnight enhances flavors even more.
Allowing the chicken to rest after grilling keeps it juicy.
Feel free to adjust seasonings to your taste.
