- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ teaspoon ground cinnamon
- 6 tablespoons salted butter
- 28 ounces sweetened condensed milk
- ½ cup sour cream
- 4 large egg yolks
- ¾ cup key lime juice
- ¼ teaspoon pure vanilla extract
- 2 teaspoons lime zest
Instructions
- Preheat the oven to 350°F (177°C).
- Line a 9-inch square baking dish with parchment paper and lightly grease it.
- In a medium bowl, combine the graham cracker crumbs, sugar, cinnamon, and melted butter. Mix until well combined.
- Press the mixture into the bottom of the prepared baking dish to form the crust.
- In another bowl, mix the sweetened condensed milk, sour cream, egg yolks, key lime juice, and vanilla extract until smooth.
- Pour the lime filling over the crust in the baking dish.
- Bake in the preheated oven for 20-25 minutes, or until the filling is just set but still slightly jiggly in the center.
- Remove from the oven and let it cool completely before refrigerating for at least 2 hours before slicing.
Notes
For added flavor, sprinkle the bars with lime zest before serving.
Store any leftovers in an airtight container in the refrigerator for up to 5 days.
These bars can be frozen for longer storage; simply wrap them tightly and freeze.
