Description
This Lemon Pasta That Tastes Like Summer is a delightful dish that combines fresh garlic, bright lemon flavor, and creamy parmesan, making it perfect for a quick and flavorful dinner.
Ingredients
Scale
- 8 ounces spaghetti
- 1 teaspoon kosher salt
- 4 tablespoons unsalted butter
- 3 garlic cloves minced
- zest of one lemon
- juice of one lemon
- 1/2 teaspoon kosher salt
- dash freshly ground black pepper
- 1/3 cup grated parmesan cheese
Instructions
- Bring a large pot of water to a boil and add the salt. Add the spaghetti and cook according to the package instructions. Before draining, reserve 1 cup of pasta water.
- While the spaghetti cooks, heat a large skillet over medium heat and melt the butter. Add the minced garlic and lemon zest, letting them cook until fragrant, about one minute.
- Stir in the lemon juice, 1/2 cup of reserved pasta water, salt, and pepper, whisking everything together.
- Add the drained spaghetti to the skillet and toss to coat in the sauce. Mix in the parmesan cheese and toss well. If the mixture is too sticky, add a bit more reserved pasta water for a smoother sauce. Adjust seasoning with more salt and pepper if needed.
Notes
Use freshly squeezed lemon juice for the best flavor.
For an extra touch, garnish with fresh herbs like parsley or basil before serving.
This dish pairs well with grilled chicken or seafood for a complete meal.
