Instructions

- Add the eggs one at a time, ensuring each egg is fully mixed into the butter mixture before adding the next.
- In a separate bowl, whisk the all-purpose flour, kosher salt, and baking soda together.
- Gradually add one-third of the flour mixture to the butter mixture, mixing on low until just combined.
- Pour in half of the buttermilk and mix on low until smooth.
- Continue alternating with the remaining flour mixture and buttermilk, ending with the flour mixture.
- Stir in the lemon extract and lemon zest until evenly combined.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Lower the oven temperature to 325°F and bake for 60 to 75 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs and no wet batter. Start checking at 60 minutes to avoid overbaking.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
