Description

This Matcha Swiss Roll Cake with Black Sesame Mousse combines the vibrant flavor of matcha with rich black sesame. It’s a delightful treat that’s easy to make and perfect for impressing guests at any gathering.


Ingredients

Scale
  • 120 g cake flour
  • 15 g matcha powder
  • 1 teaspoon baking powder
  • ¼ teaspoon kosher salt
  • 5 large eggs, separated
  • 150 g granulated sugar
  • 55 g milk, whole or 2% reduced fat
  • 1 tablespoon ice cold water
  • 1 teaspoon gelatin powder, or 1 silver gelatin sheet
  • 60 g sesame maple black sesame spread
  • 454 g heavy cream, (2 cups), very cold, divided
  • 30 g confectioners sugar, (powdered sugar)

Instructions

  1. Preheat the oven to 400°F. Line a 15×10-inch jelly roll baking sheet with parchment paper or a silpat mat and set it aside.
  2. In a small bowl, whisk together the sifted cake flour, matcha powder, baking powder, and salt. Set this mixture aside.
  3. In a large bowl, whisk together the egg yolks, granulated sugar, and milk until the mixture turns pale in color.
  4. In a separate clean bowl, whip the egg whites to medium-stiff peaks.
  5. Add the dry flour mixture to the yolk mixture, folding it to combine. Gradually add the whipped egg whites in three additions, gently folding to incorporate each addition.
  6. Pour the batter into the prepared baking sheet, spreading it evenly with an offset spatula. Bake for 8-10 minutes until the cake springs back to touch. Remove from the oven and use a mini offset spatula to loosen the cake from the edges of the pan.
  7. While the cake is still warm, invert it onto a clean kitchen towel. Carefully peel off the parchment or silpat from the cake, then use the towel to roll the cake into a log. Let it cool to room temperature on a wire rack.

Notes

For best results, ensure that all ingredients, especially the cream, are very cold before use.
You can substitute the black sesame spread with another nut spread if desired, but the flavor will differ.
Make sure to roll the cake gently to avoid cracking.
