These Meal Prep Breakfast Burritos are packed with scrambled eggs, veggies, and cheese, making them a delightful and filling breakfast option that’s super easy to prepare.

- 1 lb meat, chicken sausage, bacon, ground beef, etc.
- 2 cups veggies, tomatoes, zucchini, bell pepper, red onion, mushrooms
- Pinch salt
- 12 eggs
- 1 cup cottage cheese
- 10 burrito-sized tortillas
- 1 cup cheddar cheese, shredded
Instructions
- Cook the meat in a medium skillet over medium heat until fully cooked, then remove and set aside.
- In the same skillet, sauté your choice of vegetables with a pinch of salt until softened, about 3-5 minutes.
- In a bowl, whisk together eggs and cottage cheese, seasoning with salt and pepper. Pour this mixture into the skillet with the vegetables, cooking until scrambled.
- Assemble the burritos by placing a tortilla on a flat surface and adding ¾ cup of the egg mixture, followed by 2 tablespoons of meat and 2 tablespoons of cheese.
- Fold in the sides of the tortilla and roll it up to create a burrito. Continue this process until all fillings have been used.
- To store, wrap each burrito in foil and freeze them in a single layer on a baking sheet. Once frozen, transfer to a freezer-safe bag or container for up to 2 months.
- Alternatively, store wrapped burritos in the fridge for up to 1 week.
- Reheat burritos in the microwave until hot or bake in the oven at 375°F for 15-20 minutes.
