- Watermelon slices mint leaves, optional decoration
Instructions
- In a medium bowl, stir the watermelon Jell-O into ½ cup of boiling water until fully dissolved.
- Add ½ cup of cold water and stir well. Allow the mixture to cool for 10 to 15 minutes without setting.
- Gently fold in the Cool Whip until smooth, then incorporate the diced watermelon.
- Spoon the mixture into the graham cracker crust and smooth the top surface.
- Refrigerate the pie for at least 4 hours, until set and firm throughout.
- Slice and serve chilled, garnishing with additional cool whip, fresh watermelon cubes, or mint leaves if desired.
- Store leftovers covered in the fridge for up to 3 days; avoid freezing.
Notes
For best results, use fresh seedless watermelon that’s been blotted dry to prevent excess moisture.
