Ingredients

  • 1 (3.6-ounce box) watermelon-flavored jell-o
  • ½ cup boiling water
  • ½ cup cold water
  • 1 (8-ounce tub) cool whip thawed
  • 1½ cups diced seedless watermelon blotted dry
  • 1 (9-inch) graham cracker pie crust
  • Watermelon slices mint leaves, optional decoration

Instructions

  1. In a medium bowl, stir the watermelon Jell-O into ½ cup of boiling water until fully dissolved.
  2. Add ½ cup of cold water and stir well. Allow the mixture to cool for 10 to 15 minutes without setting.
  3. Gently fold in the Cool Whip until smooth, then incorporate the diced watermelon.
  4. Spoon the mixture into the graham cracker crust and smooth the top surface.
  5. Refrigerate the pie for at least 4 hours, until set and firm throughout.
  6. Slice and serve chilled, garnishing with additional cool whip, fresh watermelon cubes, or mint leaves if desired.
  7. Store leftovers covered in the fridge for up to 3 days; avoid freezing.

Notes

For best results, use fresh seedless watermelon that’s been blotted dry to prevent excess moisture.
Allowing the jell-o mixture to cool properly avoids premature setting before combining with other ingredients.
