One Pot Spinach Artichoke Chicken Orzo offers an irresistible blend of flavors, combining tender chicken, creamy orzo, and fresh spinach for a quick and satisfying meal perfect for any night of the week.


Ingredients

  • 2 tablespoons olive oil
  • pounds chicken breast
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 16 ounces orzo
  • 4 cups chicken broth
  • 1½ cup heavy cream
  • 4 ounces cream cheese
  • 1 teaspoon salt
  • ¼ cup parmesan cheese, plus more for garnish
  • 3 cloves garlic, minced
  • 1 can quartered artichoke hearts, (14 ounce) drained
  • 8 ounces fresh spinach

Instructions

  1. Cut the chicken into 1-inch cubes and season with salt, pepper, and garlic powder.
  2. Heat a large skillet over medium-high heat. Add the olive oil and once hot, spread the chicken in a single layer in the pan. Cook for 3-4 minutes, then stir and cook for an additional 3-4 minutes.
  3. Add orzo to the skillet along with chicken broth and heavy cream. Stir and bring to a simmer. Cook for about 10-12 minutes or until the orzo is tender, stirring occasionally to prevent sticking.
  4. Stir in salt, cream cheese, parmesan cheese, artichoke hearts, and fresh spinach. Continue cooking, stirring regularly, until the spinach is wilted and cheese is incorporated.
  5. Garnish with additional parmesan and fresh cracked pepper.

Notes

For a bit of extra flavor, add some red pepper flakes when cooking the chicken.
This dish can be served immediately or stored for leftovers; just add a splash of broth when reheating to loosen the sauce.
