Description

This Parmesan Crusted Chicken dish boasts an irresistible flavor, easy prep, and delightful crunch from panko breadcrumbs. Perfect for a quick dinner or a comforting meal, it features juicy chicken breasts topped with a cheesy crust that everyone will love.


Ingredients

  • 2 boneless skinless chicken breasts, cut in half lengthwise
  • ¾ cup grated parmesan cheese, divided
  • ½ cup shredded provolone cheese
  • 6 tablespoons unsalted butter, melted and divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt, or to taste
  • ½ teaspoon pepper, or to taste
  • ½ cup panko breadcrumbs

Instructions

  1. Preheat a grill pan over medium-high heat.
  2. In a small mixing bowl, combine 4 tablespoons of melted butter, garlic powder, onion powder, salt, and pepper. Brush this mixture onto each chicken breast.
  3. Cook the chicken on the grill pan for 3-4 minutes, then flip to the other side.
  4. In another bowl, mix together ½ cup of Parmesan cheese and shredded provolone. Set aside.
  5. Top each chicken breast with the cheese mixture and cook for an additional 3-4 minutes, until the internal temperature reaches 165°F.
  6. Remove chicken from the grill pan and place on a baking sheet lined with foil.
  7. Preheat the oven’s broiler on high.
  8. In a separate bowl, mix the panko breadcrumbs with the remaining ¼ cup Parmesan cheese and 2 tablespoons melted butter. Evenly sprinkle this mixture over each chicken breast.
  9. Place the baking sheet under the broiler for 1-2 minutes until the breadcrumbs are golden and crispy, watching closely to avoid burning.
  10. Take out the chicken from the broiler and let it rest for 5 minutes before serving.

Notes

For a spicy kick, add a pinch of red pepper flakes to the butter mixture.
Feel free to substitute the provolone cheese with mozzarella for a different flavor profile.
Make sure to watch the chicken closely while broiling to prevent burning.
