Description

This Peach Cobbler is the perfect combination of juicy peaches and a golden, buttery topping. Simple to prepare, it’s an ideal treat for family gatherings or a comforting dessert after dinner.


Ingredients

Scale
  • 1.5 kg / 3 lb yellow peaches, peeled, stone removed, cut into eight wedges
  • 1/4 cup caster / superfine sugar
  • 1 tsp cornflour / cornstarch
  • 1 tbsp lemon juice
  • 1/8 tsp salt
  • 1 1/4 cups plain/all purpose flour
  • 1/3 cup caster / superfine sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 85 g / 6 tbsp unsalted butter
  • 1/2 cup plain yoghurt (or sour cream), full fat
  • 1 tsp demerara sugar
  • 1/2 tsp cinnamon powder
  • Ice cream or whipped cream

Instructions

  1. In a large bowl, mix the peaches and sugar. Let them macerate for 40 minutes to release juices.
  2. Preheat the oven to 210°C/410°F (200°C fan) halfway through maceration.
  3. Drain the peaches in a colander, saving the juices.
  4. In a large bowl, combine 1/4 cup (65ml) of the peach juice with cornflour, salt, and lemon juice. Mix well.
  5. Toss the macerated peaches in the syrup. Adjust with more lemon or sugar as preferred.
  6. Pour the peaches and juice into a medium baking pan and parbake for 12 minutes.

Notes

Ensure the peaches are ripe for the best flavor.
Adjust sweetness according to the natural taste of the peaches you use.
Serve warm with a scoop of ice cream or whipped cream.
