  • 3 pounds ripe peaches peeled, pitted and cut into 8 pieces
  • 2/3 cup white granulated sugar
  • 2 tablespoons corn starch
  • 1 teaspoon vanilla
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ¾ cup dark brown sugar packed
  • ¾ cup white all-purpose flour
  • 2/3 cup old fashioned rolled oats
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ stick salted butter cut into very small pieces

Instructions

  1. Preheat the oven to 350 degrees.
  2. Grease a 9-inch baking dish with non-stick spray and set it aside.
  3. In a large bowl, combine the sliced peaches with the granulated sugar and toss to coat evenly; set aside.
  4. In a medium bowl, mix brown sugar, flour, rolled oats, cinnamon, and nutmeg together.
  5. Add small pieces of butter to the mixture and blend until it resembles coarse crumbs using a pastry blender or fork.
  6. In the bowl with peaches, add vanilla, cornstarch, cinnamon, and salt, and toss to coat the slices evenly.
  7. Pour the peach mixture into the prepared baking dish.
  8. Spread the crumb topping over the peaches to cover evenly.
  9. Bake for 45-50 minutes or until the topping is golden and juices bubble at the edges.
  10. Let it rest for 15 minutes before serving, and if desired, top with vanilla ice cream and a mint sprig.
