Ingredients

  • 24 ounces fresh peaches, peeled, pitted, and diced
  • 2 tablespoons lemon juice
  • 1.75 ounces sure-jell powdered pectin
  • 3 ½ cups granulated sugar

Instructions

  1. Begin by peeling, pitting, and dicing the peaches. Place them in a large pot and crush them with a potato masher or fork to reach your desired consistency.
  2. Add the lemon juice and pectin to the crushed peaches, ensuring it's all well combined.
  3. Set the pot on medium-high heat, stirring continuously as the mixture heats. Bring it to a boil.
  4. Once boiling, add all the sugar at once and stir until fully dissolved.
  5. Return to a full rolling boil and let it boil for 1 minute while stirring to avoid sticking.
  6. Take the pot off the heat and skim off any foam on the surface.
  7. Pour the hot jam into clean mason jars, leaving about ¼ inch of headspace. Wipe the rims and seal with lids.
  8. Let the jars cool to room temperature, then store them in the refrigerator for up to 3 weeks or in the freezer for up to 6 months.
