- 1/2 cup unsalted butter
- 1 cup light brown sugar
- 1/2 cup heavy cream
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 package (8.8 oz) biscoff cookies
- 1–2 fresh peaches, thinly sliced (optional, for layering)
Instructions
- Combine peaches, granulated sugar, brown sugar, lemon juice, vanilla extract, cinnamon, and nutmeg in a saucepan over medium heat.
- Cook for 5-7 minutes until the peaches soften and juices are released.
- In a small bowl, mix cornstarch and water, then add to the peach mixture. Cook for another 2-3 minutes until thickened.
- Remove from heat and let it cool to room temperature.
Notes
Fresh peaches can be replaced with frozen ones as long as they are thawed and chopped.
Consider adding more spices like ginger for a unique flavor twist.
